Balsamic vinegar of Modena, counted in liters

Aceto Balsamico di Modena IGP is made in 93 to 95 million liters a year, and more than 93% of it is exported to over 130 countries, on the consortium's figures for 2025.

93 to 95 million liters, almost all of it shipped

The consortium puts annual output at 93 to 95 million liters, and more than 93% of it leaves Italy for over 130 countries. It presented those numbers at its annual assembly in May 2026, and they describe the 2025 season.

That volume is the first thing to understand about the name. It's a product built for export shelves, and the price of an everyday bottle reflects tens of millions of liters, not a single cellar.

Certification covers 59 acetaie, the vinegar houses. That's a short list of companies for so much vinegar.

€380 million in exports, about €1 billion at the till

Exports passed €380 million at production value in 2025, up 2.6% on 2024. The consortium estimates consumer value, what shoppers pay across every market, at around €1 billion.

Set that beside Parmigiano Reggiano, the region's largest name at €3.96 billion in consumer turnover in 2025, and the vinegar comes to roughly a quarter of it.

Every figure in this section comes from the consortium alone. It's a primary source with a stake in the numbers, and we found no independent count to put next to it.

IGP since 2009

Aceto Balsamico di Modena became an IGP in 2009, thirteen years after Parmigiano Reggiano and Prosciutto di Parma were registered as DOP in 1996.

The registration protects the words Aceto Balsamico di Modena.

Two bottles, two products

The 93 to 95 million liters describe one denomination only, and shelf prices appear in no source we hold. That's the honest limit of this page.

A bottle sold under a different protected name is a different product under a different rulebook, and nothing above describes it. Read the full name on the label, not just the word Modena, before you compare two prices.

Buying it where it's made

The 59 certified acetaie are the producers behind the name, and Modena is where the name points. Visiting hours and tasting prices aren't published in any source we could read, so contact an acetaia directly before you drive out.
